(Blair) Waldorf Salad

You know how you hear about those people who suddenly become depressed when a book, movie, or TV series ends? I always laughed and thought those people were losers.

Well, I’m worried that this might happen to me when Gossip Girl is over for good. It’s such a stupid show too. It’s just way over-the-top drama with people who act like they are incredibly important and can do anything with no consequences. Also, am I the only person who wondered if they ever graduated from college? An entire season focused on them in college and then, suddenly, none of them were in college anymore. Either they aren’t at all worried about the recession or perhaps I just missed an important episode. I’m pretty sure I haven’t missed a single episode though. This show is definitely my guilty pleasure.

Anyway, I was thinking about this yesterday and the thought of Blair Waldorf (one of my fave Gossip Girl characters) made me suddenly think of waldorf salad. I know people can’t choose their last names, so I always feel guilty associating a person’s name with an object or anything negative. A kid in kindergarten asked me if I was rich because my last name is Ritchie. I’m also pretty sure that, at some point, someone called me Ritchie Bitchy. Haters. Luckily, Blair Waldorf is just a television character, so I can make all the associations I want.

This association of Blair Waldorf with waldorf salad gave me the uncontrollable craving for this tasty treat. I quickly whipped up my own version first thing this morning (well, after a trip to the grocery store for ingredients).

Waldorf Salad

2 apples (I used Golden Delicious)
2 large handfuls of cherries
1/2 cup dried cranberries
1/2 cup unsweetened shredded coconut
3/4 cup toasted walnut pieces
1 Tablespoon lemon juice
1 cup vanilla Greek yogurt
1/4 teaspoon ground cinnamon

Cherries were on sale!

1. Toast walnuts.
2. Core and dice apples and place pieces in a large bowl.
3. Add lemon juice to apples and toss to coat.
4. Remove pits from cherries, dice, and add to apples.

I just cut around the pits.

5. Stir in yogurt.
6. Add cranberries and coconut. Stir.
7. Once walnuts are toasted and cooled, add to other ingredients.
8. Add cinnamon and stir so that everything is well combined.
9. Refrigerate and serve chilled.

This is a great, healthy dessert or snack!

Alright, I am off to investigate why the characters of Gossip Girl stopped going to college.
